A canelé is a small French pastry with a soft, custardy interior and a dark, thick, caramelized crust. It comes from the Bordeaux region of France and is traditionally flavored with vanilla and rum or cognac-based fruit liquors.

Our Ruby Chocolate canelé takes this classic to a new place—featuring ruby chocolate, the fourth natural type of chocolate after dark, milk, and white. Naturally pink in color and made from specially selected ruby cocoa beans, it has a fresh berry-like tang that’s unlike any other chocolate. No added colors, no fruit flavorings—just nature’s own surprise.

We make each one by hand in small batches using fresh eggs, whole milk, real vanilla beans, a splash of dark rum, and just enough ruby chocolate to let its vibrant flavor shine.

The batter rests in the fridge for up to 48 hours, letting the vanilla, rum, and ruby chocolate meld into a smooth, aromatic custard. Then, they’re baked slowly in traditional copper molds from France and Japan, creating the perfect contrast: a deep caramelized crust and a soft, jewel-toned center.

We ship our canelés and other treats in vacuum-sealed packs to preserve freshness, so you can enjoy a little taste of Bordeaux with a modern twist—no passport required.
