A canelé is a small French pastry with a soft, custardy interior and a dark, thick, caramelized crust. It hails from the Bordeaux region of France and is traditionally flavored with vanilla and rum, but this version brings a Japanese twist with premium matcha.

We make each one by hand in small batches using simple, real ingredients: fresh eggs, whole milk, real vanilla beans, ceremonial-grade matcha, and just a touch of dark rum for depth.

To get that perfect contrast between the caramelized crust and the soft, custardy center, our matcha canelé batter is rested in the fridge for up to 48 hours. This resting time helps the earthy matcha and sweet vanilla come together and develop the pastry’s signature texture. It's a little wait, but totally worth it.

Each one is baked low and slow in traditional copper molds from France and Japan, creating that deep caramelized exterior and tender, custardy inside—now with a subtle matcha green hue.

We ship our canelés and other items in vacuum-sealed packs to preserve freshness.

A modern take on a classic French pastry

Canelés will stay fresh and crunchy for at least a few days, but to bring back that fresh-baked crispiness, try one of these:

  • Air Fryer: Preheat to 375°F (190°C), then heat for 3–5 minutes. Let cool slightly before biting in—the crust will crisp up beautifully.
  • Conventional Oven: Preheat to 400°F (200°C), place canelés on a baking sheet, and heat for about 5–8 minutes. Let them rest for a couple of minutes for the crust to firm up.
