A canelé is a small French pastry with a soft, custardy interior and a dark, thick, caramelized crust. It hails from the Bordeaux region of France and is traditionally flavored with vanilla and rum—but this version brings something extra special to the center.

Each canelé is filled with a luscious pistachio ganache, adding a rich, nutty layer of flavor that pairs beautifully with the crisp caramelized shell and soft vanilla-rum custard inside. We finish it with a roasted macadamia nut on top for added texture and an elegant touch.

We make every canelé by hand in small batches using real ingredients: fresh eggs, whole milk, real vanilla beans, a splash of dark rum, and a touch of orange liqueur. Then we rest the batter for up to 48 hours to let the flavors deepen and develop the pastry’s signature texture.

The canelés are baked low and slow in traditional copper molds from France and Japan to create the signature contrast: deep caramelized crust on the outside, tender custard on the inside. After baking, we fill them with smooth pistachio ganache and crown each one with a whole roasted macadamia.
